Every so often I have a serious craving for buffalo sauce. It wasn't something I ever had growing up but recently it has been a strong craving. What I have realized is that the real craving is for is Buffalo Chicken Dip. The spice of the sauce with the creaminess of the cheese. Oh, my mouth is salivating just thinking about it.
You may have had this dip at a potluck and you probably felt quite full and greasy after it. A lot of times people may use full fat cream cheese, ranch, mayonnaise, and cheese. Now that does sound like an awesome dip, but not really something you should have very often.
That is why I have lightened my dip up so that I can have it as often as I want! In fact, the whole dish I made is under 500 calories! There is no way I could've eaten all that I made in one sitting, but it feels good to know that if I did, it wouldn't completely derail my healthy eating.
Ingredients:
1 Chicken Breast (check out my tip on perfectly cooked chicken!)
1/2 a Block of Greek Yogurt Cream Cheese (extra protein and low fat!)
2 T. Wing Sauce (go for a vinegar based one, not full of fat I like Franks RedHot Wing Sauce)
1 t. Ranch Dip Packet (I always stick with Hidden Valley!)
1/2 Cup Cheese of Your Choice
I went off of this original recipe and adapted as needed with the ingredients I had available.

All you need to do is mix all of these ingredients together either in a sauté pan or in a baking dish at 350 degrees to warm through and melt the cheeses. Finish off under the broiler to get a nice brown bubbly top! (click on the pictures for more detail.)
I made mine on the stove, but you could do this in the oven. If it is the middle of summer, it is nice to have a dip you can make without heating up the whole house.
I ate it throughout the week and when I wanted some I put it in a small baking dish and heated it up in the oven to get some crisp on the top.

You can really make it what you want with what you have in the fridge. If you have more yogurt than cream cheese, go with that. If you'd rather have it with cheddar cheese, change the mozzarella out for that.
Here is to a summer of delicious, and less guilty eating!
In the Midst of Buffalo Dip (hey, that rhymes!)
