Try it Out | Pepperoni Pizza Chicken

As I have mentioned before, I love pizza. So topping a chicken breast with all of the toppings for a pepperoni pizza sounds like a great idea...right? Well, I tried it out and I am happy to say that indeed it is! This chicken is a super easy dinner that can be a low carb option while still allowing you to get your pizza fix. The ingredients don't have to be an exact amount so it can be a great way to use up some leftover sauce or cheese that you might have in the fridge.

Ingredients:

Mozzarella Cheese

Pepperoni

Tomato Sauce

Tomato Paste

Chicken Breasts

Salt and Pepper

Italian Seasoning

Chicken:

Slice the chicken breasts in half and then cut the bigger part of the breast in half so that you have three slices that are approximately the same size and thickness. Season them with salt and pepper or whatever your preffered seasoning may be. Brown these on both sides in a sauté pan just enough to brown both sides but do not cook all the way through.

Next, put your chicken in a 9x13 dish that has been pre-sprayed with cooking spray. The next steps are pretty much everything you would do to make pizza.

Sauce

Some other recipes for this don't tell you to mix tomato paste and sauce, but by mixing the two together you have a thicker sauce that does not fall off of the chicken. I mixed even parts of sauce to paste and when I put it on top of the chicken it stayed in place.

Cheese & Pepperoni

From there I added generous amounts of cheese. Another piece of advice I was given was to wait to add the pepperoni to the cheese after it has melted a bit. This keeps the pepperoni from sliding off while cooking. I put the chicken in the oven for about 10 minutes, added the pepperoni and finished it off for 5 more minutes.

Finishing Touches

To get a crispy topping, turn on the broiler for the last few minutes to get a some crispy cheese and pepperoni.

Just as you would with pizza, let the cheese set for five minutes before serving. The chicken, sauce and cheese creates a delicious sauce on the bottom, so don't forget to scoop some of that on your plate along with the chicken! We had this with broccoli and it was great to have some sauce to go with simple steamed broccoli.
